Choc Chip Cookie Dough Balls

I always need healthy, satisfying & nutritious treat options in the house ready to satisfy those afternoon slump or "that time of the month" cravings, which we all know inevitably come up at some point!


These cookie dough balls are a PERFECT treat for literally anytime of the day. They are delicious, nutritious and somehow make you feel really good afterwards :) There are also really good to take kiting as they are a great energy source and all my friends love them!


This is the recipe that I used but you can substitute almost all of the ingredients if a particular flour or nut butter doesn't work for you. You can also substitute the psyllium husk for more protein, depending on what works for you! I like the extra fibre in my snacks!


Oh and when I first made these, I thought they were too doughy but if kept in the fridge, they are so awesome a little firmer and cold! - also the chocolate goes a bit more crunchy!


Alternative gluten-free flour options: almond, chickpea, coconut, oat

Alternative sugar-free & salt-free nut butters: almond butter, cashew butter, macadamia butter - any nut butter really!


INGREDIENTS:

  • 1 cup gluten-free flour

  • 1/2 cup peanut butter

  • 1 scoop protein powder

  • 1 scoop psyllium husk

  • 1/4 cup maple syrup (or honey)

  • x3 squares Lindt 85% dark chocolate


METHOD:

  1. In a food processor, mix the flour, peanut butter, protein, psyllium husk & maple syrup.

  2. Chop up the chocolate into small cubes

  3. Remove the mixture from the food processor & combine with the choc-chips.

  4. Hand roll into balls until the surface gets shiny & smooth.

  5. Store in an air tight container in the fridge.


Keep for 5 days.
